We give a much-loved dip an upgrade with our BLT guacamole recipe. Crispy bacon, crunchy lettuce and juicy tomatoes give a twist to this tasty guacamole. Try it for an easy lunch option!

  • 2 tsp olive oil
  • 3 short-cut bacon rashers, halved lengthways, thinly sliced
  • 2 avocados, seeds removed
  • 2 baby cos lettuce leaves, halved, shredded
  • 1 small red onion, finely chopped
  • 2 tomatoes, finely chopped
  • ¼ cup (60ml) lime juice
  • 2 tbsp chopped fresh coriander
  • 8 slices Coles Bakery Pane di Casa, chargrilled

  1. Step 1

    Heat oil in a medium frying pan over high heat. Cook bacon, stirring occasionally, for 4 mins or until golden and crisp. Drain on paper towel.
  2. Step 2

    Roughly mash avocado in a medium bowl. Reserve one-quarter of the lettuce, onion, tomato and bacon. Stir lime juice, coriander and remaining lettuce, onion, tomato and bacon into the avocado. Season.
  3. Step 3

    Top guacamole with reserved lettuce, onion, tomato and bacon. Serve with bread.
