Ingredients

  • 240g fresh blueberries
  • 2 limes, coarsely chopped
  • 2 tbs caster sugar
  • 4 mint sprigs
  • 1/3 cup (80ml) gin
  • 1/3cup (80ml) blue curacao liqueur
  • 1 1/2 cups crushed ice
  • 1 1/2 cups (375ml) chilled lemonade
  • Lime slices, to serve
  • Mint sprigs, extra, to serve

Method

  1. Step 1

    Thread half the blueberries onto 4 small bamboo skewers. Set aside.
  2. Step 2

    Place the chopped lime, sugar, mint sprigs and remaining blueberries in a heavy-based bowl. Use the end of a rolling pin to crush until the lime and blueberries release their juices. Add the gin, vodka or rum and stir to combine.
  3. Step 3

    Pour the curacao evenly among serving glasses. Top with ice. Strain the blueberry mixture over the ice. Top with lemonade. Serve with blueberry skewers, lime slices and extra mint.
