  • 250g fresh or frozen blueberries
  • 1 tbsp lemon juice
  • 1 tbsp caster sugar
  • 300ml thickened cream
  • 1 tbsp icing sugar
  • ½ tsp vanilla bean paste
  • 5 (50g) Coles Bakery meringue nests, crumbled

  1. Step 1

    Place the blueberries, lemon juice, sugar and 2 tbsp water in a small saucepan over low heat. Cook for 5 mins or until the sugar dissolves and the blueberries begin to break down. Set aside to cool completely.
  2. Step 2

    Use an electric mixer to whisk the cream, icing sugar and vanilla bean paste in a bowl for 2 mins or until soft peaks form. Fold through crumbled meringue.
  3. Step 3

    Spoon some of the cream mixture into serving glasses. Top with some of the blueberry mixture. Continue layering with remaining cream mixture and blueberry mixture, finishing with cream mixture. Serve immediately.
