Create a twist on a classic cocktail with this bright blueberry gin mojito.

Blueberry gin mojito

Ingredients

  • 125g blueberries
  • 1 lemon, cut into small wedges
  • 1 tbs white sugar
  • 1/2 cup mint sprigs
  • 1/4 cup (60ml) pink or purple gin
  • Crushed ice, to serve
  • 1/2 cup (125ml) soda water

Method

  1. Step 1

    Place the blueberries, lemon, sugar and half the mint in a bowl. Use the end of a rolling pin to crush the lemon, mint and berries to release their juices. Stir in the gin.

  2. Step 2

    Divide the blueberry mixture between serving glasses. Add ice, soda water and remaining mint. Serve immediately.
