Ingredients

  • 2 cups (180g) rolled oats
  • 2 tbs mixed seeds
  • 1/4 cup (60ml) honey
  • 50g butter, chopped
  • Plain yoghurt, to serve
  • Fresh fruit, such as chopped kiwifruit, chopped pineapple, halved blueberries and raspberries, to serve

Method

  1. Step 1

    Preheat oven to 180°C. Grease six holes of a ⅓-cup (80ml) muffin pan and line bases and sides with baking paper. Combine oats and mixed seeds in a bowl.

  2. Step 2

    Combine honey and butter in a small saucepan over low heat. Cook, stirring, for 3 mins or until smooth and stir into the oat mixture.

  3. Step 3

    Divide evenly among the prepared holes, using a small spoon to spread the mixture over the bases and sides of each hole. Bake for 20-25 mins or until golden. Set aside to cool.

  4. Step 4

    Spoon plain or berry-flavoured yoghurt into each cup and top with fresh fruit to serve.
