Brigitte’s vodka-cherry oysters


  • 6 cherries, pitted
  • 1 tbs chilled vodka or apple juice
  • Rock salt, to serve
  • 12 fresh oysters (from the deli)
  • 3 tsp lemon juice
  • 1 tbs finely chopped chives

  1. Step 1

    Use the back of a spoon to gently crush the cherries in a small bowl. Add the vodka or apple juice. Season and stir to combine.

  2. Step 2

    Arrange the rock salt on a shallow serving platter. Top with the oysters. Spoon the cherry mixture evenly among oysters. Drizzle with lemon juice and sprinkle with chives. Serve immediately.
