Preheat oven to 180°C. Grease and line a 19cm x 29cm slice pan with baking paper. Heat the oil in a frying pan over medium-high heat. Add the onion and cook, stirring, for 5 mins or until the onion softens. Set side to cool slightly.
Meanwhile, combine the flour, cheddar, egg, milk, oil, zucchini, broccoli, spinach and peas in a large bowl. Stir in the onion mixture. Season. Pour into the prepared pan and smooth the surface.
Bake for 30 mins or until light golden and cooked through. Set aside in the pan to cool slightly before turning onto a clean work surface. Cut into pieces and serve warm or at room temperature.
