Put an extra green twist on your usual pesto recipe with this homemade broccoli pesto. Loaded with hidden veg, this dish is an easy winner.

Broccoli pesto


  • 200g broccoli, chopped
  • 1 cup basil leaves
  • 1/3 cup (25g) finely grated parmesan
  • 1 tbs lemon juice
  • 2 garlic cloves, quartered
  • 1/3 cup (35g) walnuts, toasted
  • 1/3 cup (80ml) Coles Classic Olive Oil
  • Toasted walnuts, extra, to serve

  1. Step 1

    Place the broccoli in large heatproof bowl. Cover with boiling water and set aside for 30 secs. Refresh under cold water. Drain well.
  2. Step 2

    Place the broccoli, basil, parmesan, lemon juice, garlic and walnuts in a food processor and process until finely chopped. Season. With the motor running, add the oil in a thin, steady stream until well combined.
  3. Step 3

    Transfer the broccoli mixture to a serving jar or bowl. Top with extra walnuts to serve.
