Broccolini and mushroom stir-fry

Ingredients

  • 1 tbs rice bran oil
  • 1 red onion, thinly sliced
  • 1 tbs finely grated ginger
  • 1 garlic clove, crushed
  • 200g brown cup mushrooms, quartered
  • 1 bunch broccolini, cut into 5cm pieces
  • 2 tbs oyster sauce
  • 2 tbs sweet chilli sauce
  • Steamed jasmine rice, to serve
  • Coriander leaves, to serve
  • Thinly sliced red chilli, to serve

Method

  1. Step 1

    Heat the oil in wok or large frying pan over high heat. Cook the onion, ginger and garlic for 2 mins or until onion softens slightly.
  2. Step 2

    Add the mushroom and broccolini and cook for 3 mins or until just tender.
  3. Step 3

    Add the oyster sauce and sweet chilli sauce and stir-fry until heated through.
  4. Step 4

    Divide the steamed rice among serving bowls. Top with the stir-fry and sprinkle with coriander and chilli to serve.
