A classic dessert that never disappoints. Served with cream and mango, these brown sugar meringues will solve all your sweet cravings.

Brown sugar meringues with mango and mint


  • 2 egg whites
  • ¼ cup (55g) caster sugar
  • ¼ cup (55g) brown sugar
  • 300ml thickened cream
  • 1 tbs icing sugar
  • ½ tsp Coles Brand ground ginger
  • 1 ripe Kensington Pride mango, peeled, thinly sliced
  • 2 tbs baby mint leaves

  1. Step 1

    Preheat oven to 120°C. Draw 4 x 10cm discs on baking paper. Turn over baking paper and use to line a baking tray.
  2. Step 2

    Use an electric mixer to whisk the egg whites in a clean, dry bowl until soft peaks form. Gradually add the combined caster sugar and brown sugar, 1 tbs at a time, beating well after each addition. Continue whisking until the sugar dissolves completely.
  3. Step 3

    Spoon the mixture onto the discs on prepared tray. Use a round-bladed knife to spread to the edges. Bake for 1 hour or until meringues are dry to the touch. Turn oven off. Leave meringues in oven, with door ajar, to cool completely.
  4. Step 4

    Use an electric mixer to beat the cream, icing sugar and ginger until soft peaks form.
  5. Step 5

    Top the meringues with the cream and mango. Sprinkle with the mint to serve.
