Brussels sprouts with orange and hazelnuts

Ingredients

  • ⅓ cup (45g) hazelnuts
  • 500g Brussels sprouts, ends trimmed, halved
  • 2 tsp olive oil
  • 100g shortcut bacon, finely chopped
  • 1 orange, zested, juiced
  • 1 tbs wholegrain mustard
  • ¼ cup coarsely chopped chives
  • Grilled salmon, to serve

Method

  1. Step 1

    Preheat oven to 180°C. Spread the hazelnuts over a baking tray. Bake for 5-7 mins or until toasted. Set aside to cool. Rub hazelnuts in a tea towel to remove the skins. Coarsely chop.
  2. Step 2

    Meanwhile, cook the Brussels sprouts in a large saucepan of boiling water for 2 mins or until almost tender. Drain well.
  3. Step 3

    Heat the oil in a large frying pan over high heat. Cook the bacon, stirring, for 5 mins or until golden brown. Add the Brussels sprouts and cook, tossing, for 2 mins or until golden. Add the orange zest, orange juice and mustard. Cook, tossing, for 2 mins or until heated through. Season with salt and pepper. Sprinkle with hazelnuts and chives. Serve with grilled salmon.
