Craving wings with a yummy sauce but don't want takeaway? Try this buffalo wings with blue cheese sauce to recreate that irresistible taste.

Buffalo wings with blue cheese sauce

Ingredients

  • 900g Coles RSPCA Approved Chicken Wings
  • 1/4 cup (60ml) maple syrup
  • 1/4 cup (60ml) dark rum (optional)
  • 2 tbs sriracha
  • 1 tsp ground paprika
  • 1 tsp ground cumin

Blue cheese sauce

  • 80g soft blue cheese
  • 1/4 cup (60g) sour cream
  • 1/4 cup (75g) mayonnaise
  • 2 tbs finely chopped chives

Method

  1. Step 1

    Use kitchen scissors to cut each chicken wing in half at the joint. Place in a single layer in a glass or ceramic dish.
  2. Step 2

    Combine the maple syrup, rum, chilli sauce, paprika and cumin in a small bowl. Pour evenly over the chicken wings and turn to coat in the sauce. Cover with plastic wrap and place in the fridge for 2 hours to develop the flavours.
  3. Step 3

    Preheat oven to 150°C. Line a large roasting pan with baking paper. Place the wings in a single layer in the lined pan. Pour the marinade over the wings. Bake, turning occasionally, for 1 hour or until cooked through and sauce reduces and caramelises.
  4. Step 4

    Meanwhile, to make the blue cheese sauce, place the cheese, sour cream and mayonnaise in a bowl. Use a fork to mash until smooth. Add half the chives and stir to combine.
  5. Step 5

    Place the chicken wings on a serving platter. Transfer the blue cheese sauce to a serving bowl. Sprinkle chicken and sauce with remaining chives.
