Bunny pancakes

Ingredients

  • 350g pkt Coles Original Pancake Mix
  • Melted butter, to grease
  • Blueberries, to serve
  • Banana, cut into bite-sized shapes, to serve
  • Watermelon, cut into bite-sized shapes, to serve
  • Strawberries, cut into bite-sized shapes, to serve
  • Vanilla marshmallows, halved, to decorate
  • Black writing icing, to decorate

Method

  1. Step 1

    Prepare the pancake mix following packet directions. Transfer one-third of the mixture to a piping bag fitted with a 5mm plain nozzle. 

  2. Step 2

    Grease a non-stick frying pan with a little butter. Place over low heat. In batches, pipe mixture into the pan to make ears and paws. Cook for 1-2 mins or until bubbles rise to the surface. Turn and cook for a further 1 min or until cooked through. Transfer to a plate and cover to keep warm. Repeat with more butter and remaining mixture to make heads and bodies. 

  3. Step 3

    Divide pancakes among serving plates and arrange into bunny shapes. Decorate pancakes with blueberries, watermelon and strawberry. Use the marshmallow to make tails and use the icing to draw noses.  

Recipe tip

Don’t have a piping bag? Place the pancake mixture in a clean sealable plastic bag, cut off 1 corner and you have a cheat’s piping bag.
