Butter beans and vegetable stew

Ingredients

  • 1 tbs olive oil
  • 1 brown onion, chopped
  • 2 garlic cloves
  • 2 carrots, coarsely chopped
  • 2 zucchini, coarsely chopped
  • 140g Coles Italian Tomato paste
  • 2 x 420g cans Coles Butter Beans, rinsed, drained
  • 2 cups (500ml) Coles Vegetable Stock
  • 1 stick Coles Simply Garlic Bread

Method

  1. Step 1

    Preheat oven to 200°C. Heat oil in a large saucepan over medium heat. Add the onion, garlic, carrot and zucchini and cook, stirring, for 5 mins or until vegetables soften.

  2. Step 2

    Add tomato paste and cook, stirring, for 1 min or until heated through. Add beans and stock and bring to the boil. Reduce heat to low and simmer for 10 mins or until vegetables are tender.

  3. Step 3

    Meanwhile, cook garlic bread following packet directions.

  4. Step 4

    Serve the bean mixture with garlic bread.
