This foolproof buttercream icing recipe is great to keep up your sleeve for celebrations. With vanilla, strawberry and coffee options, this easy buttercream recipe has all your bases covered.

Buttercream 3 ways


  • 125g butter, softened
  • 1 1/2 cups (240g) icing sugar mixture
  • 1 tbs milk

Vanilla buttercream

  • 1 tsp vanilla bean paste

Coffee buttercream

  • 1 tbs instant coffee powder
  • 2 tsp boiling water

Strawberry buttercream

  • 1 tbs Coles Strawberry Topping
  • Pink liquid food colouring, to tint

  1. Step 1

    Use an electric mixer to beat butter in a bowl until very pale. Add the icing sugar, in batches, beating well after each addition. Add the milk and beat to combine.
  2. Step 2

    To make vanilla buttercream, add 1 tsp vanilla bean paste to the buttercream and beat until well combined.
  3. Step 3

    To make coffee buttercream, place coffee powder and boiling water in a heatproof bowl and stir until coffee powder dissolves. Add to buttercream and beat until combined.
  4. Step 4

    To make strawberry buttercream, add the strawberry topping and a little pink liquid food colouring to the buttercream and beat until well combined.

    Get decorating: You’ll have enough buttercream for 12 cupcakes or a 22cm cake.
