Butterflied BBQ chicken with sesame-soy dressing

Ingredients

  • 1.8kg Coles RSPCA Approved Medium Whole Chicken
  • 1/3 cup (80ml) light soy sauce
  • 2 tbs rice wine vinegar
  • 1 tbs caster sugar
  • 1 tbs miso paste
  • 1 tbs sesame oil
  • 2 tsp finely grated ginger
  • 1 tsp freshly ground black pepper
  • 2 baby cos lettuce, cut into wedges
  • 1 Lebanese cucumber, sliced
  • 1/2 cup coriander leaves
  • Toasted sesame seeds, to sprinkle

Method

  1. Step 1

    Place chicken, breast-side down, on a clean work surface. Use kitchen scissors to cut along each side of the backbone to remove. Place the chicken breast-side up. Press down on the breastbone to flatten. Whisk soy sauce, vinegar, sugar, miso, oil, ginger and pepper in a small bowl. Place chicken in a shallow dish and pour over half the soy mixture. Turn to coat. Cover and place in the fridge for 1 hour to develop the flavours.

  2. Step 2

    Heat a covered barbecue on high. (Alternatively, preheat oven to 180°C.) Spray chicken with olive oil spray. Cook on the grill for 5 mins each side or until golden brown. Transfer to a baking dish. Turn off burners on one side. Place the baking dish on the unlit side and close the barbecue. Cook, basting with pan juices occasionally, for 1 hour or until the chicken is cooked through. (Alternatively, roast in oven for 1 hour or until cooked through.) Set aside for 10 mins to rest.

  3. Step 3

    Arrange lettuce, cucumber and coriander on a platter. Drizzle with remaining dressing. Sprinkle chicken with sesame seeds and serve with the salad.
