Cajun-style pork and pineapple

Ingredients

  • 3 limes
  • 400g Coles Australian Pork Sizzle Steaks*, thickly sliced
  • 1 tbs Cajun seasoning
  • ½ pineapple, peeled, cored, cut into 2cm pieces
  • 400g pkt Coles Kitchen Family Stir-Fry

Method

  1. Step 1

    Zest and juice 1 lime. Cut remaining limes into wedges or cheeks.
  2. Step 2

    Spray a wok or large frying pan with olive oil spray and heat over high heat. Add the pork. Stir-fry for 2-3 mins or until browned. Add Cajun seasoning and stir-fry for 1 min or until aromatic. Transfer the pork mixture to a plate.

  3. Step 3

    Spray the wok or pan with more olive oil spray. Heat over medium-high heat. Add the pineapple and stir-fry for 2-3 mins or until lightly browned. Add the vegetables and stir-fry for 2-3 mins or until the vegetables are just tender. Return the pork mixture to the wok or pan with the lime juice and 2 tbs water. Stir-fry for 1-2 mins or until the pork is heated through.

  4. Step 4

    Divide the mixture among serving bowls. Sprinkle with lime zest and serve with lime wedges or cheeks.
