Camp breakfast hash

Ingredients

  • 2 tbs olive oil
  • 180g pkt Coles Streaky Bacon
  • 2 pork sausages, cases removed and torn
  • 600g Coles Crème Gold Washed Potatoes, cut into 2cm cubes
  • 2 tsp smoked paprika
  • 2 spring onions, thinly sliced
  • 200g Perino Cherry Tomatoes, halved
  • 1/2 cup (60g) Coles Grated Pizza Blend Cheese
  • 4 free-range eggs, at room temperature
  • Avocado on toast, to serve

Method

  1. Step 1

    Prepare a campfire. Heat the oil in a large heavy-based flameproof frying pan (25cm base measurement) over low embers. Add bacon and sausage and cook, stirring occasionally, for 5 mins or until it starts to go golden and crisp.

  2. Step 2

    Add the potato, cover with a lid and cook, stirring occasionally, for 10 mins or until the potato is tender and golden. Add paprika, half the spring onions and tomatoes and cook for 2 mins or until tomatoes are slightly soft.

  3. Step 3

    Make 4 small wells in the pan. Sprinkle the potatoes with cheese and crack eggs into the wells. Cook, partially covered, for 6-8 mins or until the egg whites are just set with a runny yolk.

  4. Step 4

    Sprinkle with remaining spring onions. Serve with avocado on toast.

Cast-iron cookware is great for campfires because it’s thick and retains heat. If you don’t have a cast-iron saucepan, you can use a flameproof, heavy-based saucepan instead. Try these easy breakfast skillet swaps

Ideally, everything needs to be as simple as possible when camping, so while our recipe calls for bacon, onion, cherry tomatoes and a few more ingredients, you can throw in whatever you have. Think leftover sausages or steak cut into slices, onion cut into wedges, leftover veggies like broccoli or capsicum, and any type of cheese you have. The essential ingredients are the potato (to give the dish its substance) and the eggs (to hold it together) – but even those can be replaced with what you have on hand (for example, sweet potato works as well as potato).

Our tips for how to make it at home

This recipe is quite similar to a shakshuka and can easily be made at home. Cook it on the stovetop over medium heat (turn it down to low when you add the eggs). Because you’ll be at home and everything is more easily accessible in your kitchen, you can elevate this dish from being simply breakfast potatoes in a skillet to something much more gourmet. For example, sprinkle the finished dish with a homemade dukkah, or serve it with a tomato relish and crusty bread and you’ll have a meal suitable for brunch with friends. 

A word about campfire safety

If you’re new to camping there are a few tips to know about cooking over a campfire to keep it safe and avoid accidents. Before you do anything, check the fire danger rating and never light a fire if there’s a total fire ban.

Select a location for your fire that’s sheltered from the wind, and free from grass and leaves. Make sure no trees and branches are overhanging the fire, too. You might be able to see where other campers have made a fire and start in the same spot. 

Start with some dry tinder, then add small sticks, some newspaper or dry grass and a few bigger sticks. Build your fire in a conical shape. Once it is burning, add some bigger sticks to keep it going. 

The best time to cook on a campfire is when the fire has burnt down to coals and the coals are glowing red. Open flames can burn your food.
