The kids will love decorating these festive cupcakes. Simply pipe the peppermint buttercream over the cupcakes, then sprinkle with candy cane.

Ingredients

  • 250g butter, softened
  • 500g icing sugar mixture
  • 1 tbs milk
  • 1 tsp peppermint essence
  • Red gel food colouring, to decorate
  • 12 Coles Chocolate Cupcakes, icing removed
  • Candy canes, crushed, to decorate

Method

  1. Step 1

    Use an electric mixer to beat the butter in a bowl until very pale. Gradually add icing sugar, beating well after each addition. Beat in the milk and peppermint essence.
  2. Step 2

    Brush 4 stripes of the food colouring inside a piping bag fitted with a 1cm plain nozzle. Add the buttercream and pipe over cupcakes. Sprinkle with crushed candy canes to decorate.

    Santa’s tip: Use a small clean paintbrush to paint vertical strips of food colouring inside the piping bag, starting at the bottom of the bag.
