Caprese-style beef burgers with caramelised peach

Ingredients

  • 2 yellow peaches, stoned, cut into 1cm-thick rounds
  • 1 tbs brown sugar
  • 500g pkt Coles Australian No Added Hormones Classic Beef Burgers
  • 200g fresh mozzarella, drained sliced
  • 4 Coles Brioche Burger buns, split, toasted
  • 2 vine-ripened tomatoes, sliced
  • 1/3 cup basil leaves
  • Balsamic glaze, to serve

Method

  1. Step 1

    Sprinkle the peach slices with the sugar. Heat a barbecue grill or greased chargrill on medium-high. Add peach and cook for 1-2 mins each side or until heated through and caramelised but still firm. Transfer to a plate and cover to keep warm.

  2. Step 2

    Cook the burger patties on the barbecue grill or chargrill for 3-4 mins each side or until just cooked through. Top the patties with mozzarella and close the barbecue lid or loosely cover. Cook for 2 mins or until mozzarella melts and patties are cooked through.

  3. Step 3

    Divide the bun bases among serving plates. Top with the tomato, basil, burger patties and caramelised peach. Drizzle with the balsamic glaze. Top with the bun tops and serve immediately.
