Ingredients

  • 25g butter
  • 4 tbs caster sugar
  • 2 green apples, peeled, cut into 2cm cubes
  • 250g cream cheese, at room temperature
  • 1/2 cup (125ml) thickened cream
  • 2 tbs icing sugar mixture
  • 1 tbs lemon juice
  • 2 cups (200g) apple cereal clusters
  • 1 green apple, extra, thinly sliced

Method

  1. Step 1

    Melt the butter and caster sugar in a frying pan over medium heat. Add apple and cook, stirring occasionally, until tender and lightly browned. Transfer to a heatproof bowl to cool to room temperature. Cover with plastic wrap and place in the fridge to chill until ready to use.
  2. Step 2

    Use an electric mixer to whisk the cream cheese, cream, icing sugar mixture and lemon juice until thick and creamy.
  3. Step 3

    Divide cereal clusters among four serving glasses. Top with cream cheese mixture and place in the fridge for 3 hours or until set.
  4. Step 4

    Top with apple mixture. Decorate with the fresh apple slices to serve.
