Caramelised tomato bruschetta


  • 500g truss tomatoes, cut into wedges
  • 2 tbs brown sugar
  • 1 tbs olive oil
  • 1 tbs red wine vinegar
  • ½ garlic clove, crushed
  • ¼ cup chopped basil
  • 1 small red onion, finely chopped
  • 4 Coles Bakery Light Rye Sourdough Rolls, split, chargrilled, or sliced Coles Bakery Rustic Baguette
  • Chopped basil, extra, to serve

  1. Step 1

    Combine the tomato, sugar and oil in a medium bowl. Heat a barbecue flat plate or large frying pan on high. Cook the tomato, stirring occasionally, for 2 mins or until charred and just softened. Return to the bowl. Set aside for 5 mins to cool.
  2. Step 2

    Add the vinegar, garlic, basil and onion to the tomato mixture. Toss to combine. Season. Divide the tomato mixture among the bread slices. Top with the extra basil and serve immediately.
