Carrot tarte tatin

Ingredients

  • 2 tbs brown sugar
  • 4 thyme sprigs
  • 40g butter, chopped
  • 2 carrots, peeled, cut into 5mm slices diagonally
  • 1 sheet frozen puff pastry
  • 50g goat’s cheese, crumbled
  • Thyme sprigs, extra, to serve
  • Mixed salad leaves, to serve

Method

  1. Step 1

    Preheat oven to 220°C. Grease a 22cm round cake pan.
  2. Step 2

    Sprinkle base of prepared pan with sugar. Top with thyme and dot with butter. Arrange carrots in a spiral pattern in the pan. Cut a 22cm circle from the pastry and place over carrot. Bake for 15-18 mins or until pastry is golden and puffed. Set aside in the pan for 2 mins to cool slightly.
  3. Step 3

    Carefully turn the tarte tatin out onto a serving platter. Sprinkle with goat’s cheese and extra thyme. Serve with mixed salad leaves.
