This Chai Tea Mix recipe featuring fragrant spices like cinnamon and star anise will be your new favourite blend. Just what you need in winter!

  • 2 cinnamon sticks or quills, chopped
  • 1 tbs fennel seeds
  • 2 tsp black peppercorns
  • 1 tsp dried chilli flakes
  • 4 whole star anise
  • 10 cardamom pods
  • 1 tsp whole cloves
  • 1 cup loose black tea leaves
  • ½ cup (50g) malted milk powder

  1. Step 1

    Cook the cinnamon, fennel seeds, peppercorns, chilli flakes, star anise, cardamom and cloves in a frying pan over medium-low heat until fragrant. Cool slightly. Transfer mixture to a food processor and process until crushed.
  2. Step 2

    Layer the tea leaves, milk powder and spice mix in a sealable jar. Attach a label with these serving instructions: Fill a tea infuser with chai tea mix and add to a mug of boiling water. Stand for 3 mins. Serve with a dash of milk.
