Chamomile hot toddy

Set and forget this hot toddy in the slow cooker for a delicious drink with floral notes of chamomile tea, smoky whiskey, honey, and a hint of lemon.

Ingredients

  • 2 lemons, thinly sliced
  • 1 orange, thinly sliced
  • 10cm-piece ginger, sliced
  • 2 cinnamon sticks
  • 8 whole cloves
  • 4 whole star anise
  • 1/4 cup (60ml) honey
  • 4 chamomile tea bags
  • Honey, extra, to serve
  • 240ml whisky (optional)
  • Orange slices, extra, to serve

Method

  1. Step 1

    Combine the lemon, orange, ginger, cinnamon, cloves, star anise and honey in a 5L slow cooker. Add 10 cups (2.5L) water and tea bags, draping tea bag strings over the edge. Cover and cook on low for 2 hours or until aromatic. (Alternatively, cook the lemon mixture in a saucepan over low heat for 20-30 mins or until aromatic.)

  2. Step 2

    Drizzle extra honey around the rims of 8 heatproof serving glasses. Pour 30ml whisky or bourbon, if using, into each glass. Ladle lemon mixture among glasses. Garnish with extra orange slices.

Recipe tip

Cook it right: Try adding leftover star anise and 2-3 cloves to our Mulled Wine Pear Cobbler.

Ingredient tip: You can substitute whisky for bourbon.
