If you’re on the hunt for a new and delicious seafood recipe, this chargrilled lobster recipe is definitely one to add to your repertoire. A generous amount of lime really makes the dish sing.

Chargrilled lime and vodka lobster

Ingredients

  • 4 limes, halved
  • 1/4 cup (60ml) vodka or extra lime juice
  • 1/4 cup (60ml) rice wine vinegar
  • 1 tbs caster sugar
  • 1 long red chilli, seeded, finely chopped (optional)
  • 2 tbs chopped coriander
  • 350g pkt Coles Kitchen Green Goddess Salad Kit
  • 2 Coles WA Rock Lobsters, halved lengthways
  • Coriander leaves, to serve

Method

  1. Step 1

    Heat a barbecue grill or chargrill on high. Cook limes, cut-side down, for 5 mins or until charred. Juice 4 lime halves.
  2. Step 2

    Place the lime juice, vodka or extra lime juice, vinegar and sugar in a small saucepan. Bring to a simmer over medium heat and cook for 5 mins or until mixture reduces by half. Stir in the chilli, if using. Set aside to cool. Stir in the chopped coriander.
  3. Step 3

    Meanwhile, prepare the salad in a large bowl following packet directions.
  4. Step 4

    Place lobster on a serving platter and drizzle with lime juice mixture. Sprinkle with coriander leaves. Serve with charred limes and salad.
