Ingredients

  • 550g loaf Coles Banana Bread, ends trimmed, cut into 1cm slices
  • 3 tsp gelatine powder
  • 1/4 cup boiling water
  • 500g cream cheese, softened
  • 2/3 cup dark brown sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1 tsp vanilla extract
  • 300ml thickened cream
  • 40g butter
  • 3 bananas, peeled, halved lengthways
  • 1/2 cup extra dark brown sugar
  • 300ml extra thickened cream

Method

  1. Step 1

    Grease and line the base of a 22cm round (base) springform pan with baking paper. Grease the side. Line base and side of the pan with banana bread, trimming to fit. Refrigerate until required.
  2. Step 2

    Place boiling water in a small heatproof jug. Sprinkle over gelatine. Stir until gelatine dissolves. Cool 5 minutes.
  3. Step 3

    Using an electric mixer, beat cream cheese, sugar, spices and vanilla until light and fluffy. Gradually add cream, beating until mixture thickens slightly. With motor operating, add gelatine mixture, beating until just combined. Pour mixture into pan. Refrigerate for 6 hours or until set.
  4. Step 4

    Melt butter in a medium frying pan over medium heat. Add bananas cut-side down. Cook for 2 minutes or until lightly browned. Turn. Cook for 1 minute. Transfer to a plate. Add extra brown sugar and 1/4 cup extra cream to the pan. Cook, stirring, for 2 minutes or until the sauce thickens.
  5. Step 5

    Using an electric mixer, beat remaining extra cream until soft peaks. Place cheesecake on a serving platter. Top with whipped cream, caramelised bananas and caramel sauce. Serve.
