Preheat oven to 200°C. Heat beef following packet directions, reserving 1/2 cup (125ml) of the cooking liquid. Shred the beef. Add the sauce from the brisket kit and reserved liquid. Toss to combine. Cover to keep warm.
Meanwhile, line a large baking tray with baking paper. Place the rolls, cut-sides up, on the lined tray. Bake for 5 mins or until heated through. Top evenly with the cheddar. Bake for a further 5 mins or until the cheddar melts and is golden.
Prepare the salad kit following packet directions. Top the roll bases with the brisket, avocado and salad. Top with the roll tops to serve.
