Ingredients

  • 400g pkt Coles Kitchen Baby Potatoes with Butter & Parsley
  • 4 free-range eggs
  • 200g trimmed green beans
  • 3 cups shredded Coles Hot Roast RSPCA Approved Chicken
  • 110g tub pitted kalamata olives
  • 200g medley Perino tomatoes
  • 1 bunch halved radishes
  • Flat-leaf parsley leaves, to serve
  • 1/3 cup (80ml) French dressing

Method

  1. Step 1

    Start by cooking a 400g pkt Coles Kitchen Baby Potatoes with Butter & Parsley following packet directions. Cut into quarters.

  2. Step 2

    Cook 4 free-range eggs in a saucepan of boiling water for 6 mins for soft-boiled* or until cooked to your liking, adding 200g trimmed green beans for the last 2 mins of cooking. Refresh under cold water. Drain. Peel eggs and cut in half.

  3. Step 3

    Arrange 3 cups shredded Coles Hot Roast RSPCA Approved Chicken on a platter with potato, egg, beans, a 110g tub pitted kalamata olives, 200g medley Perino tomatoes, 1 bunch halved radishes, and flat-leaf parsley leaves. Drizzle with ⅓ cup (80ml) French dressing. Season.

    * A runny yolk is considered to be a raw egg. We recommend that pregnant women, young children, the elderly and people with compromised immune systems do not consume raw egg.
