Discover the trick to cooking this tasty chicken and vegetable paella in just 20 minutes.

Ingredients

  • 4 Coles Australian RSPCA Approved Chicken Thigh Fillets, coarsely chopped
  • 1 tbs Portuguese seasoning or Cajun seasoning
  • 400g can diced tomatoes
  • 2 x 250g pkts microwavable brown and wild rice mix
  • 500g pkt frozen stir-fry vegetables, thawed

Method

  1. Step 1

    Combine the chicken and Portuguese or Cajun seasoning in a large bowl.
  2. Step 2

    Heat a non-stick frying pan over high heat. Add half the chicken and cook, turning occasionally, for 5 mins or until brown all over. Transfer to a bowl. Repeat with remaining chicken.
  3. Step 3

    Return the chicken to the pan with tomato. Bring to a simmer. Stir in rice mixture and vegetables. Cook, tossing occasionally, for 5-7 mins or until rice and vegetables are heated through.

Use it up:
Make your own Portuguese seasoning with spices you have in the pantry – combine 2 tbs ground paprika, 1 tsp ground cinnamon, 1 tsp black pepper, 1/2 tsp ground cumin, 1/4 tsp ground ginger, 1/2 tsp ground nutmeg, 1/2 tsp dried oregano and 1/4 tsp thyme in a bowl. For some citrus flavour, stir in 2 tsp orange zest. Season.
