Made with eggnog and filled with berries, this cheat's trifle is perfect for the festive season. This easy dessert is a Christmas classic that your friends and family are sure to love.

Ingredients

  • 500g frozen mixed berries
  • ½ cup (80g) icing sugar mixture
  • 250g strawberries, quartered
  • 125g blueberries
  • 1½ cups (375ml) thickened cream
  • 1 tsp vanilla extract
  • 1L vanilla custard
  • 2 tbs brandy
  • ½ tsp ground nutmeg
  • 400g pkt Coles Jam Sponge Roll, cut into 1.5cm-thick slices

Method

  1. Step 1

    Combine mixed berries and half the icing sugar in a medium saucepan. Place over medium heat. Cook, stirring occasionally, for 8 mins or until the berries collapse slightly. Set aside to cool. Add the strawberry and blueberries. Stir to combine.
  2. Step 2

    Use an electric mixer to beat the cream, vanilla and remaining icing sugar in a bowl until stiff peaks form. Add 1 tbs of the berry juices from the pan and swirl to marble.
  3. Step 3

    Place the custard, brandy or orange juice and nutmeg in a bowl. Stir to combine.
  4. Step 4

    Reserve 1 tbs of the remaining berry juices in the pan. Arrange the sponge roll slices over the base and side of a 12-cup (3L) glass serving dish. Carefully pour over the custard mixture. Top with the berry mixture and cream mixture. Place in the fridge for 2 hours or overnight or until set.
  5. Step 5

    Drizzle with reserved berry juices to serve.
