Cheat’s kimchi with fried eggs

Ingredients

  • 1 brown onion, thinly sliced
  • 1 wombok (Chinese cabbage), halved, thickly sliced
  • 200g green beans, halved lengthways
  • 2 carrots, peeled, cut into matchsticks
  • 1/3 cup (80ml) salt-reduced vegetable stock
  • 2 tbs sambal oelek (optional)
  • 2 tbs Coles Asia Soy Sauce
  • 2 tbs fish sauce
  • 2 garlic cloves, crushed
  • 5cm-piece ginger, peeled, grated
  • 4 Coles Australian Free Range Eggs, fried sunny-side up

Method

  1. Step 1

    Combine the onion, wombok, beans, carrot, stock, sambal oelek or chilli sauce, if using, soy sauce, fish sauce, garlic and ginger in a slow cooker. Cover and cook for 2 hours on high or until tender. Season.
  2. Step 2

    Divide vegetable mixture among bowls. Top with fried eggs to serve.

    Serve with... shredded nori, toasted sesame seeds and sesame oil.
