Ingredients

  • 2 x 200g pkts Coles Finest Truffle Potato Croquettes Rosemary sprigs, to serve

Herb mayo

  • 2/3 cups (200g) mayonnaise
  • 2 tbs coarsely chopped flat-leaf parsley
  • 2 tbs coarsely chopped mint
  • 1 tbs coarsely chopped rosemary
  • 1 tbs coarsely chopped chives
  • 2 tsp lemon juice

Method

  1. Step 1

    Preheat oven to 200°C. Bake the croquettes following packet directions.

  2. Step 2

    Meanwhile, to make the herb mayo, place the mayonnaise, parsley, mint, rosemary, chives and lemon juice in a blender and blend until smooth. Season. Transfer to a small serving bowl.

  3. Step 3

    Arrange the croquettes on a serving platter. Sprinkle with rosemary sprigs and serve with the herb mayo.
