Cheesy broccoli and corn fritters

Ingredients

  • 1 cup (150g) plain flour
  • 1/2 cup (75g) self-raising flour
  • 1 cup (250ml) milk
  • 2 free-range eggs, lightly whisked
  • 1 cup (120g) frozen corn kernels, thawed, drained
  • 1 cup finely chopped broccoli florets
  • 1 cup (120g) grated tasty cheddar
  • 2 tbs finely chopped chives
  • 1/2 cup (125ml) vegetable oil
  • Greek-style yoghurt, to serve

Method

  1. Step 1

    Sift the combined flour into a large bowl. Make a well in the centre. Whisk the milk and egg in a jug. Add to the flour in the bowl and whisk until smooth. Add the corn, broccoli, cheddar and chives and stir to combine.

  2. Step 2

    Heat one-third of the oil in a large frying pan over medium heat. Spoon four 1/4-cup (60ml) portions of the corn mixture into the pan. Cook for 3 mins each side or until golden and cooked through. Transfer to a plate lined with paper towel. Repeat, in 2 more batches, with remaining oil and corn mixture.

  3. Step 3

    Serve fritters warm or chilled with the yoghurt.
