Cheesy chicken and baked bean pie

Ingredients

  • 1 tbs olive oil
  • 750g chicken thigh fillets, chopped
  • 1 brown onion, finely chopped
  • 1 carrot, finely chopped
  • 200g cup mushrooms, sliced
  • 2 x 300g cans Heinz Beanz® in Tomato Sauce
  • 1 1/2 tbs Worcestershire sauce
  • 1/3 cup (80ml) chicken stock
  • 1 1/2 cups (180g) shredded tasty cheddar
  • 14 filo pastry sheets
  • Chopped flat-leaf parsley, to serve

Method

  1. Step 1

    Preheat oven to 200°C. Heat half the oil in a frying pan over high heat. Add half the chicken and cook, stirring occasionally, for 5 mins or until golden brown. Transfer to a heatproof bowl. Repeat with remaining chicken.

  2. Step 2

    Heat remaining oil in the pan. Add onion, carrot and mushroom and cook, stirring, for 5 mins or until the vegetables soften. Return the chicken to the pan. Add the baked beans, Worcestershire sauce and stock and bring to a simmer. Cook, stirring, for 10 mins or until the sauce boils and thickens. Season. Set aside to cool slightly.

  3. Step 3

    Transfer mixture to a 12-cup (3L) baking dish. Sprinkle with cheddar. Place 1 filo sheet on a clean work surface. Gently scrunch and place over the chicken mixture. Repeat, in batches, with remaining filo. Lightly spray the filo with olive oil spray.

  4. Step 4

    Bake for 20 mins or until the filo is golden brown and the chicken is cooked through. Season with pepper and sprinkle with parsley to serve.
