Cherry and hazelnut blondies

Ingredients

  • 300g Coles Belgian White Chocolate, chopped
  • 125g butter, chopped
  • 3/4 cup (165g) caster sugar
  • 2 free-range eggs, lightly whisked
  • 3/4 cup (110g) plain flour
  • 1/2 cup (75g) self-raising flour
  • 1/2 cup (50g) hazelnut meal
  • 300g cherries, pitted, halved
  • 100g Coles Belgian White Chocolate, extra, chopped
  • 1/2 cup (60g) chopped hazelnuts
  • 50g white chocolate melts, melted
  • Cherries, extra, to serve

Method

  1. Step 1

    Preheat oven to 180°C. Grease base and sides of a 20cm (base measurement) square cake pan and line with baking paper, allowing the sides to overhang.

  2. Step 2

    Place chocolate and butter in a saucepan over low heat. Cook, stirring, for 5 mins or until chocolate melts and mixture is smooth and combined. Set aside for 5 mins to cool slightly. Add sugar and stir to combine. Stir in the egg, combined flour and hazelnut meal. Gently fold in the cherry and extra chocolate until just combined. Pour into prepared pan and sprinkle with hazelnut.

  3. Step 3

    Bake for 50-55 mins or until a skewer inserted into the centre comes out clean. Set aside in the pan to cool completely.

  4. Step 4

    Drizzle the blondie with melted chocolate and top with extra cherries.
