Kick off your Christmas party by making our Cherry and watermelon mimosas recipe. All it takes is 15 minutes to whip up these impressive-looking drinks. Simple yet delicious, the guests will love the fruity flavours.

Cherry and watermelon mimosas


  • 1 cup (120g) frozen pitted cherries
  • ¼ cup (55g) caster sugar
  • 1 tsp vanilla bean paste
  • 1.2kg chilled watermelon, peeled, chopped
  • ½ cup (125ml) orange-flavoured liqueur
  • 750ml btl sparkling rosé, chilled
  • Watermelon wedges, to serve
  • Crushed ice, to serve

  1. Step 1

    Bring the cherries, sugar, vanilla and ⅓ cup (80ml) water to a simmer in a saucepan over medium heat. Cook, stirring occasionally, for 2 mins or until sugar dissolves. Cook, without stirring, for 3 mins or until cherries are tender and syrup thickens. Set aside to cool.
  2. Step 2

    Place cherry mixture in a blender and blend until smooth. Transfer to a jug and place in the fridge to chill.
  3. Step 3

    Meanwhile, place the chopped watermelon in a clean blender and blend until smooth. Strain through a fine sieve into a large jug. Discard the solids. Place in the fridge to chill.
  4. Step 4

    Divide cherry puree among serving glasses. Top with watermelon juice, liqueur and rosé. Serve with the watermelon wedges and ice.
