Ingredients

  • 1.5kg watermelon, rind removed, cut into wedges
  • 300g cherries, pitted, halved
  • 150g burrata or fresh mozzarella, drained
  • 2 tbs olive oil
  • 2 tbs balsamic vinegar
  • 1/4 cup mint leaves
  • 1/4 cup basil leaves

Method

  1. Step 1

    Arrange the watermelon, cherry and burrata or mozzarella on a serving plate.

  2. Step 2

    Place the oil and vinegar in a screw-top jar. Season. Seal and shake to combine. Drizzle over watermelon mixture and sprinkle with mint and basil. Season with pepper to serve.
