  • 2 chicken breast fillets, halved horizontally
  • 2 tbs barbecue sauce
  • 4 Dairylea Burger Cheese Slices
  • 4 drained canned pineapple rings
  • 1 tbs olive oil
  • 1 small red onion, thinly sliced
  • 4 jumbo crusty rolls, split, toasted
  • 4 cos lettuce leaves, torn
  • 1 avocado, stoned, peeled, thinly sliced
  • Barbecue sauce, extra, to drizzle

  1. Step 1

    Combine chicken and barbecue sauce in a bowl. Heat a barbecue grill or chargrill on medium. Add chicken and cook for 5 mins. Turn and cook for 3 mins. Top chicken with cheese. Cook for a further 2 mins or until the cheese melts and chicken is cooked through.
  2. Step 2

    Meanwhile, add the pineapple to the grill and cook for 2 mins each side or until heated through.
  3. Step 3

    While pineapple is cooking, heat the oil in a frying pan over medium heat. Add the onion and cook, stirring, for 5 mins or until the onion softens.
  4. Step 4

    Place roll bases on serving plates. Top with lettuce, avocado, pineapple, chicken and onion. Drizzle with extra barbecue sauce and top with roll tops.
