Chicken and nectarine noodle salad


  • 180g dried soba noodles or other noodles like udon, egg noodles or rice noodles
  • 450g pkt frozen bean, broccoli & sugar snap pea mix or any vegetable mix
  • 4 yellow nectarines or peaches, stoned, cut into wedges
  • 1 leftover roast chicken or turkey, meat shredded
  • 1/4 cup (60ml) miso and sesame dressing or any Asian-style dressing

  1. Step 1

    Cook the noodles in a saucepan of boiling water following packet directions. Refresh under cold water. Drain well. Place in a large bowl.
  2. Step 2

    Meanwhile, cook vegetables in the microwave following packet directions.
  3. Step 3

    Place the vegetables, chicken or turkey, nectarine or peaches, and noodles on a serving platter. Drizzle with dressing. Season to serve.
