Chicken and snow pea laksa

Whip up chicken and snow pea laksa for a tasty family meal. Featuring chilli, lime juice and fresh coriander, this flavour combo leaves you wanting more.

  • 2 tsp vegetable oil
  • ½ cup (150g) laksa paste
  • 400ml can coconut milk
  • 3 cups (750ml) chicken stock
  • 1 long red chilli, finely chopped (optional)
  • 1 tbs fish sauce
  • 2 tbs palm sugar
  • 1 tbs lime juice
  • 600g Coles RSPCA Approved Chicken Breast Fillets, thinly sliced
  • 150g snow peas, trimmed
  • 450g pkt hokkein noodles
  • 1 long red chilli, extra, thinly sliced
  • ⅓ cup coriander leaves, to serve
  • 4 spring onions, green part only, thinly sliced

  1. Step 1

    Heat oil in a wok over medium heat. Add laksa paste. Cook for 2 mins or until fragrant. Add coconut milk, stock, chopped chilli, fish sauce, palm sugar and lime juice. Bring to the boil. Simmer for 10 mins.
  2. Step 2

    Add chicken and cook for 5 mins. Add snow peas and cook for 3 mins or until tender crisp.
  3. Step 3

    Meanwhile heat noodles following packet directions. Divide noodles among large serving bowls. Pour laksa mixture over the noodles. Top with sliced chilli, coriander leaves and spring onion.
