Ready in less than 30 minutes, this quick and easy Chicken and antipasto pasta salad unites flavours of the Mediterranean.

  • 70g Coles Large Shell Pasta
  • ½ cup shredded barbecued chicken
  • 75g semi-dried tomatoes, drained
  • 75g chargrilled capsicum strips, drained
  • 1 tbs shredded basil
  • 40g fresh ricotta, crumbled

  1. Step 1

    Cook the pasta in a medium saucepan of salted boiling water following packet directions or until al dente. Refresh under cold water, drain well. Set aside to cool.
  2. Step 2

    Place the pasta in a medium bowl. Add the chicken, vegetables, basil and ricotta and toss gently to combine.
