Chicken cordon bleu with hommus mash and roasted tomatoes

Ingredients

  • 1kg Carisma potatoes, peeled, chopped
  • 1 Coles Australian Broccolini Family Pack
  • 200g tub hommus
  • 40g butter
  • 1/3 cup (80ml) milk
  • 4 Coles Chicken Cordon Bleu
  • 500g cherry tomatoes
  • 200ml pkt Coles Red Wine Jus

Method

  1. Step 1

    Preheat oven to 200°C. Line a large baking tray with baking paper. Place potato in a large saucepan and cover with cold water. Bring to the boil over high heat. Reduce heat to medium and cook for 15 mins or until potato is very tender, adding the broccolini for the last 3 mins of cooking. Remove broccolini with a slotted spoon and transfer to a plate. Cover to keep warm. Drain the potato and return to the pan with the hommus, butter and milk. Mash until smooth.

  2. Step 2

    Meanwhile, place the chicken and tomatoes on the lined tray. Bake for 15 mins or until tomatoes are blistered and the chicken is cooked through. 

  3. Step 3

    Heat the jus following packet directions. Divide the chicken, tomato, potato mixture and broccolini among serving plates. Drizzle with jus to serve.
