Ingredients

  • 2 cups (150g) Japanese breadcrumbs
  • 2 tsp ground paprika
  • 1/2 cup (150g) mayonnaise or aioli
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp lemon pepper
  • 1 tsp salt
  • 2 chicken breast fillets, cut into 4cm pieces
  • Mayonnaise, to serve
  • Sweet chilli sauce, to serve
  • Lemon wedges, to serve

Method

  1. Step 1

    Line a large baking tray with baking paper.

  2. Step 2

    Combine the breadcrumbs and half the paprika in a large bowl.

  3. Step 3

    Combine the mayonnaise, onion powder, garlic powder, lemon pepper, salt and remaining paprika in a shallow bowl. Add the chicken and toss to coat. Add 5 pieces of chicken to the breadcrumb mixture and toss to coat. Transfer to the prepared tray in a single layer. Repeat with remaining chicken. Place in the fridge for 15 mins to rest.

  4. Step 4

    Preheat the air fryer to 200°C. Arrange a batch of chicken in a single layer in the basket of the air fryer. Cook for 15 mins or until golden and cooked through. Transfer to a warm plate and lightly cover with foil to keep warm. Repeat with remaining chicken.

  5. Step 5

    Serve chicken nuggets with mayonnaise, sweet chilli sauce and lemon wedges.
