Ingredients

  • 1 tbs peanut oil
  • 500g Coles RSPCA Approved Chicken Mince
  • 2 garlic cloves, crushed
  • 2 tsp freshly grated ginger
  • 2 tbs oyster sauce
  • 1 tbs soy sauce
  • 1 celery stick, finely chopped
  • 1 red onion, thinly sliced
  • 1 spring onion, sliced
  • 1 long red chilli, thinly sliced
  • 250g pkt microwavable jasmine rice
  • 12 baby cos lettuce leaves
  • Spring onion, sliced, extra, to serve
  • Lime wedges, to serve

Method

  1. Step 1

    Heat the oil in large frying pan over high heat. Add the mince and cook, stirring with a wooden spoon to break up lumps, for 5 mins or until browned. Add the garlic, ginger, oyster sauce and soy sauce and cook, stirring, for 2 mins. Add the celery, onion, spring onion and chilli and cook for 2 mins or until vegetables are just tender.
  2. Step 2

    Meanwhile, heat the rice following packet directions. Add to the pan and stir through until well combined.
  3. Step 3

    Spoon the mince mixture evenly among lettuce leaves. Top with extra spring onion. Serve with lime wedges.
