Ingredients

  • 1 1/2 cups (300g) long-grain rice, rinsed
  • 550g pkt Coles Australian Chicken, Sage & Thyme Sausages, casings removed
  • 1 free-range egg, lightly whisked
  • 2 cups (240g) Coles Frozen Carrots, Corn & Peas
  • 1/4 bunch spring onions
  • 2 tbs soy sauce

Method

  1. Step 1

    Place rice in a medium saucepan with 2 cups (500ml) water and bring to the boil over medium heat. Cover with a lid, then reduce heat to low and cook for 12 mins or until liquid is absorbed. Spread rice in a thin layer on a large baking tray and set aside to cool, tossing occasionally, for 20 mins.

  2. Step 2

    Meanwhile, heat a wok or large heavy-based frying pan over high heat. Add the sausage meat, in 2 batches, and cook, stirring with a wooden spoon to break up into lumps, for 5 mins or until golden and cooked through. Transfer to a large heatproof bowl.

  3. Step 3

    Return wok or pan to high heat. Pour in the egg and swirl to coat base of pan. Cook for 1 min or until egg begins to set. Use a straight-edged wooden spoon to push and fold the egg for 1 min or until cooked to your liking. Transfer to the bowl with the sausage meat.

  4. Step 4

    Return the wok or pan to high heat. Add the vegetables and stir-fry for 3 mins or until heated through.

  5. Step 5

    Cut 1 spring onion into thin strips and place in a bowl of iced water. Set aside for 10 mins to curl. Thinly slice the remaining spring onion.

  6. Step 6

    Add rice and sausage mixture to the wok or pan over high heat and stir-fry for 5 mins or until rice is heated through. Add soy sauce and sliced spring onion and toss to combine. Divide among serving bowls and sprinkle with the spring onion curls to serve.
