Ingredients

  • 4 Coles RSPCA Approved Chicken Breast Schnitzels
  • 1 Granny Smith apple, thinly sliced crossways
  • 2 spring onions, thinly sliced
  • 1 bunch radishes, trimmed, thinly sliced
  • 120g pkt Coles Australian Baby Rocket
  • 1 tbs chopped basil
  • 2 tbs red wine vinegar
  • 1 tbs honey
  • 1 tbs olive oil
  • Lemon wedges, to serve

Method

  1. Step 1

    Preheat oven to 200°C. Line a large baking tray with baking paper. Cook the chicken schnitzels following packet directions.
  2. Step 2

    Meanwhile, combine the apple, spring onion, radish and rocket in a large bowl. Combine the basil, vinegar, honey and olive oil in a small bowl. Drizzle over the apple mixture. Season.
  3. Step 3

    Serve the chicken schnitzels with the apple salad and lemon wedges.
