Take your classic chicken souvlaki recipe to the next level with these delicious burgers. Made with a homemade avocado aioli, this tasty dish is an easy weeknight winner.

Chicken souvlaki burger with avocado aioli


  • 600g Coles RSPCA Approved Chicken Thigh Fillets, halved
  • 2 tsp dried oregano
  • 1 lemon, rind finely grated, juiced
  • 4 garlic cloves, crushed
  • 1 avocado, stoned, peeled, chopped
  • 1 tbs Dijon mustard
  • 1 tsp Tabasco sauce
  • 4 Coles Bakery Light Sourdough Hamburger Rolls*, split, toasted
  • 1 large tomato, sliced
  • 1 small red onion, thinly sliced
  • 1/2 oak leaf lettuce, leaves separated

  1. Step 1

    Combine chicken, oregano, lemon rind, half the lemon juice and half the garlic in a bowl. Season.
  2. Step 2

    Place the avocado, mustard, Tabasco sauce, remaining garlic and remaining lemon juice in a food processor and process until smooth.
  3. Step 3

    Heat a greased barbecue grill or chargrill on medium-high. Cook the chicken, turning, for 8-10 mins or until cooked through. Transfer to a plate and set aside for 2 mins to rest.
  4. Step 4

    Spread roll bases with avocado aioli. Top with chicken, tomato, onion and lettuce. Top with roll tops and season with pepper to serve.
