Ingredients

  • 1 tbs olive oil
  • 2 x 400g cans chickpeas, rinsed, drained
  • 1 tbs Mission Taco Seasoning
  • 280g pkt Coles Street Tortillas, chargrilled
  • 125g shredded tasty cheddar
  • 1/2 x 300g jar Coles Mild Salsa
  • 1/2 x 300g tub sour cream
  • 1 avocado, stoned, peeled, cut into wedges
  • 120g pkt Coles Australian 4 Leaf Blend

Method

  1. Step 1

    Heat the oil in a large frying pan over high heat. Add the chickpeas, taco seasoning and ⅓ cup (80ml) water. Cook, stirring, for 5-6 mins or until the mixture thickens slightly.
  2. Step 2

    Divide the tortillas among serving plates. Top with the chickpea mixture, cheddar, salsa, sour cream, avocado and salad leaves. Serve immediately.

    Waste wise: Before rinsing the chickpeas, drain the liquid (aquafaba) into a container. It makes a great egg-white alternative in our vegan meringues at coles.com.au/eggfreeminimeringues.
