Chipotle chicken taquitos


  • 2 1/2 cups shredded Coles Hot Roast RSPCA Approved Chicken
  • 2 cups (240g) shredded tasty cheddar
  • 2/3 cup (160ml) chipotle in adobo sauce
  • 12 small flour tortillas
  • 400g pkt Coles Kitchen Mexican Style Salad Kit

  1. Step 1

    Combine the chicken, cheddar and chipotle in a bowl. Spoon the chicken mixture into the centre of each tortilla. Fold over 1 edge, then fold in the sides and roll up to enclose the filling.

  2. Step 2

    Place a large non-stick frying pan over medium heat and spray with olive oil spray. Add the taquitos and cook, turning, for 6-8 mins or until crisp and light golden.

  3. Step 3

    Combine salad and half the dressing from the kit in a bowl. Divide taquitos and salad mixture among serving plates. Drizzle with remaining dressing.
